要旨

工程の収率は $1$ 以下だと思われている。糖化では $1$ を超える。超えるぶんがどこから来るのかを、質量で数える。新しい定理も法則も主張しない。

第一に、糖化の質量収率は $1$ を超える。繰り返し単位 $162.1406$ からグルコース $180.1559$ が出るので、$\mathbf{1.111109}$ になる（第2節）。

第二に、どこで切るのをやめるかで値が変わる。マルトースで止めれば $\mathbf{1.055555}$ で、超過は半分になる（第2節）。

第三に、超過の比は、切った結合の数の比と一致する。実測 $\mathbf{2.000000}$ で、切るたびに水が一つ入るという読みがそのまま出る（第2節）。

第四に、これが本稿の芯である。超過ぶんは取り込んだ水の質量そのものである。デンプン $100$ g からの超過 $\mathbf{11.110912}$ g が、入った水の質量と $10^{-15}$ の精度で一致する（第3節）。

第五に、だから $1$ を超えるのは保存則の破れではない。反応物である水を、原料に数えず生成物にだけ数えているという、境目の置き方である（第3節）。

第六に、分離子は、水を原料に数えるかどうかである。数えれば収率は $1$ を超えず、数えなければ超える（第4節）。

Abstract

A process yield is assumed to be at most one. In saccharification it is more.Where the excess comes from is counted, in mass.No new theorem or law is claimed.

First, the mass yield of saccharification exceeds one、the repeating unit of $162.1406$ gives glucose at $180.1559$, hence $\mathbf{1.111109}$ (Section 2).

Second, the value depends on where the cutting stops、stopping at maltose gives $\mathbf{1.055555}$, halving the excess (Section 2).

Third, the ratio of the excesses equals the ratio of bonds cut、measured at $\mathbf{2.000000}$, so the reading “one water enters per cut” appears directly as a ratio (Section 2).

Fourth, and this is the core. The excess is exactly the water taken up、the excess of $\mathbf{11.110912}$ g from $100$ g of starch agrees with the mass of water entering to within $10^{-15}$ (Section 3).

Fifth, so exceeding one is not a failure of conservation、water, a reactant, is left out of the feedstock and counted in the product: a placement of the boundary (Section 3).

Sixth, the separator is whether water is counted as a feedstock、count it and the yield never exceeds one; leave it out and it does (Section 4).
